This star-bright, pale straw colored wine offers intense aromas of apricot, nectarine, white peach, fresh flowers and orange peel. On the palate this wine shows balance with abundant flavors of ripe peaches and stone fruit with notes of citrus. The mouthfeel is soft and voluptuous with notes of ripe white cherries. The finish is long and punctuated by a food friendly dose of acidity.
We like to pick our Viognier while the grapes a bit earlier than other folks. Our theory is that by the time the wine has a couple months of bottling aging, a freshness will remain to balance the natural opulence of the grape. We do only stainless steel fermentation after overnight skin contact with the juice to enhance the aroma.
